Ellen Hart is the owner of the iconic Ellen’s Stardust Diner, the Times Square hot spot known for its world-famous singing waitstaff, the “Stardusters.” A true New Yorker, Ellen was a student at Jamaica High School in Queens when she was selected as Miss Subway in 1959, a title that helped launch her career in singing, acting, and modeling. With a lifelong passion for entertainment and hospitality, she and her husband opened Ellen’s Café near City Hall, which became a favorite gathering spot for politicians and civil servants. Building on that success, they later founded Ellen’s Stardust Diner, the 1950s-themed eatery where the waitstaff sing while they serve, performing Broadway favorites and more. The diner has become a launchpad for aspiring Broadway stars, with many Stardusters having gone on to successful careers in Broadway shows and touring productions. It is also a must-visit spot for theatergoers, who often stop by for a meal before heading to a Broadway show.
